Whoever said there can be too much of a good thing surely needed to consider one exception: the wine cellar. Some of the world’s newest and most historic properties boast impressive cellars that are outdone only by the wines themselves, like 2000 Pétrus and 1845 Château Gruaud Larose. The only thing as good as being able to choose from these immense inventories, of course, is the chance to see them firsthand. Luckily, these venues showcase their best.

When you opened Big Jones, what did you envision? At the time, Southern food wasn’t being taken seriously as a regional cuisine of value. We wanted to change that. Many of the Southern restaurants that existed outside of the South were fueling stereotypes about what the cuisine was, without reflecting its true spirit. I would place Southern cuisine on the world stage with regional French cuisine, regional Mexican cuisine, and regional Chinese cuisine.

Burgers have a storied (or stacked, rather) history in a place like Chicago. While the hamburger’s beginnings are contested and centuries-old, many still credit a Windy City spot called Drexel's Pure Food with debuting America’s first burger served on a bun in 1917. In 1929 Chicago saw the arrival of White Castle and its original five-cent burger, and then, of course, there were the golden arches themselves in 1955, when McDonald’s opened its first Illinois location in the suburbs.
