Sarah Murray found her calling at a young age: food and beverage. She waitressed as a teenager, and the interactions with customers spoke to her. “I knew this was the industry I wanted to be a part of,” she says of the fast pace and the connections with diners. The idea of running her own place ruminated, and in 2012, Murray took the leap and opened Prairie Bell Roadhouse in her native Oklahoma.

Like so many executives in the gaming industry, Alesha Konskey hadn’t planned a career in the profession. Indeed, the Cleveland native majored in graphic design at Notre Dame with a goal to specialize in corporate identity and marketing. But somewhere in her mind, the casino business still lurked. Every year, the Konskey family visited Las Vegas to see relatives. A cousin worked as a manager for Caesars Entertainment.

But a funny thing happened on the way to the kitchen. While waiting to meet with his adviser days before classes began, he read that UNLV was inaugurating its first degree program in casino management. That degree fascinated him even more than culinary arts.
