Heat the oven to 180C/160C Fan and line a 20cm/8in square baking tin with parchment paper. Put the butter and chocolate into a heat-proof bowl and melt either in short bursts in the microwave or suspended over a pan of simmering water (do not let the bottom of the bowl touch the water). Leave to cool slightly to room temperature. Put the eggs and caster sugar into a large bowl (or the bowl of a stand mixer) and whisk using an electric whisk until light, pale and fluffy.

Preheat the oven to 170C/150C Fan/Gas 3. Warm the butter, sugar and maple syrup in a small, heavy-based saucepan, stirring occasionally until the butter has melted and the sugar has dissolved. Remove from the heat. Mix together the flour, cocoa and salt in a bowl, then beat into the melted butter with a wooden spoon until smooth. In a small bowl, whisk the egg with the vanilla then stir into the pan, ensuring everything is well combined. Fold in the nuts and chocolate chips.

Place the butter and chocolate into a microwave-safe mug. Microwave on high (800W) in 20-second bursts, until the chocolate and butter have melted and stir together. Mix the milk into the melted mixture. Add the sugar, flour, cocoa and salt and stir together to get a smooth mixture. Microwave on high for 45–60 seconds (for an 800W microwave, adjust timings for other wattages) until the brownie is bubbling and cooked but still a bit gooey in the middle.
