If you are cooking it independent of the meal plan, you will only need a third of the chicken. The remaining chicken is used in a stir fry and a chicken chilli.

This simple chicken curry uses a tin of tomato soup as a shortcut to create a creamy, mild and slightly sweet curry sauce, not dissimilar to tikka masala. Great served with pilau rice or naan bread.

Preheat the oven to 170C/150C Fan/Gas 3. Season the turkey drumstick all over with salt and pepper. Heat the oil in a flameproof, lidded casserole over a medium heat. Add the turkey drumstick and fry for 4-5 minutes, turning regularly until lightly browned on all sides. Transfer to a plate and set aside. Chop the carrots and celery into roughly 2.5cm/1in lengths. Add the onion, celery and carrot to the casserole and fry for 4-5 minutes, stirring regularly.

Preheat the oven to 220C/200C Fan/Gas 7. Season the chicken all over with salt and pepper. Heat 2 tablespoons of the oil in a large flameproof casserole over a medium–high heat. Place the chicken in the pot, breast-side up. Using tongs, press lightly to make sure the skin comes into even contact with the bottom of the pot. This will brown the legs and render any excess fat. If using thighs or legs, sear the pieces skin-side down.
