Creamy white beans with tahini, oregano and cumin This rich and creamy dish is packed full of nutrition and delivers a luxurious eating experience without the heaviness and saturated fat of double cream. The tahini paste is a protein and calcium rich ingredient that creates an indulgent texture and carries the herb and spice flavour wonderfully. Beautiful with butter beans but haricot beans, chickpeas and cannellini would work just as well. MethodHeat the olive oil in a pan over a medium heat.

Heat the oil in a lidded saucepan over a medium heat. Add the onion and celery and sweat for 5 minutes with the lid on. Add the garlic and sweet potato and cook for a further 5 minutes, until beginning to soften. Add the chopped tomatoes, tomato purée, oregano, paprika, chilli flakes and stock. Stir well and bring to the boil. Reduce the heat and simmer with the lid on for 10 minutes. Add the butterbeans and simmer without the lid on for 10–15 minutes, or until the sweet potato is soft.

Preheat the oven to 200C/180C Fan/Gas 6. Butter a wide 3-litre/5¼-pint ovenproof dish. Put the potatoes into a large saucepan, cover with water. Add salt and bring to the boil. Boil for 4 minutes, add the cauliflower and boil for another 4 minutes. Drain well and tip into the prepared dish. Season with pepper. Put the cornflour into a bowl, pour in the cream and whisk to combine. Season with pepper. Scatter half the cheese over the potato and cauliflower. Scatter over the herbs and top with the haddock.

Healthy twistsThere are so many creative ways to add a healthy twist to traditional comfort ‘treat’ foods. For example, I love to make a delicious chicken pie using a lighter crème fraîche instead of double cream and topping it with filo instead of shortcrust pastry. Just by swapping out those two ingredients, the result is much lower in saturated fat while still having all the creamy flavour and crunchy texture of the classic version.

Pour the wine into a saucepan and boil over a high heat until the volume has reduced by half. Set aside. Meanwhile, heat the oil in a lidded casserole dish. Add the chicken joints and fry over a high heat until golden-brown all over. Remove from the pan and set aside. Add the bacon and fry until the fat is rendered, then remove from the pan and set aside. Add the mushrooms and fry until cooked, then remove from the pan and set aside.
