I’m started writing this at LAX on my way home to Brooklyn. On Sunday night, for the first time in more than three weeks, I slept in my apartment, where I’ve lived for a few years, but now live solo. I’m beyond grateful for the generosity of friends and family who have housed me (and fed me and comforted me) over the past few weeks, and I’m so excited to be in my own space. Despite having lots of familiar stuff in it, it feels new.

And while not a primary consideration in this review, the Dome also works very well as a dehydrator, thanks to the size of the basket and the ability to set the temperature to a very low 140°F. Dried orange or apple rings, or even chiles to make your own chile flakes are easy and rewarding projects. Overall, the Typhur feels sturdy and durable, and is a functional fashion statement of an air fryer.

As I spent the weekend relaxing on sand and on the couch, the people of Rafah were on my mind. In the five Thanksgivings I've hosted, I've never found cooking a turkey to be technically all that hard. Yes, it can be a space hog, yes it can take a while, but when you break it down, my turkey roasting process involves rubbing something on and under the turkey skin and sticking it in the oven-perhaps with a spot of basting. Predictive thermometers have been around for a few years now, and they do exactly what the name suggests.

Handling food-hot food, specifically-is another important feature of any cooking glove. To test that, we slow-cooked racks of baby back ribs until they were practically falling off the bone, then used the gloves to move the racks, hold, and slice them. Finally, we heated a pellet grill to 600°F and placed a cast-iron skillet inside for 15 minutes to preheat (the actual temperature of the skillet as measured by a laser thermometer fluctuated between 595°F and 615°F).

Squash and beans are a combination I always love in soups, salads, tacos, and burritos, and it's no surprise that the two ingredients also work great together in a veggie burger. These burgers are excellent with a slice of mozzarella or melty vegan cheese, which adds richness and some extra structural Support on a bun. And since the beans and bit of starch do all the work in terms of binding the burger, I recommend the "Smash Burger" cooking method.
