    Set a wide, deep frying pan over a high heat and add the olive oil. Add the mince, breaking it up well with a wooden spoon. Season generously and fry for 5–8 minutes, until any liquid evaporates and the mince starts to crisp. When the mince has started to brown, stir the onions and garlic in with the oregano and cinnamon. Reduce the heat a little and fry for 5 minutes, stirring everything together (add a touch extra olive oil if it looks dry).

    To make the batch-cooked tomato sauce, heat the oil in a large lidded saucepan over a medium heat. Add the onion and garlic and cook for 5–10 minutes, until they have softened and are just starting to turn translucent. Add the chopped tomatoes and passata and season generously with salt and pepper. Give everything a good stir and put the lid on, slightly ajar, and turn the heat down to low. Cook for at least 30 minutes, stirring occasionally, until the sauce is thick. Set aside.

    Preheat the oven to 190C/180C Fan/Gas 5. Put the clarified butter in a flameproof casserole (with a lid) that’s big enough to hold the onions in a single layer and place over a high heat. As soon as it’s smoking hot, add the onions, cut-side down: they should sizzle. Sprinkle with the salt. Leave the onions over the heat for 5 minutes, then put the casserole into the oven and roast for 20 minutes. To make the curry sauce, put all the ingredients into a food processor and blitz until smooth.
