For the shredded chicken, rub the seasoning all over the chicken. Heat the oil in a large lidded saucepan or casserole and fry the chicken for 5 minutes, or until golden-brown. Pour over the passata and stock and tuck in the bay leaves. Add the cider vinegar and season with salt and pepper. Bring to the boil, turn down the heat, cover and leave to simmer gently for 2 hours. When the chicken is very tender, carefully remove from the sauce and transfer to a plate. Shred with a couple of forks.

Slice the aubergines into 1cm/½ in thick strips and lay on a chopping board. Season with salt on both sides and leave for 10 minutes while you prepare the rest of your ingredients. Heat a sauté pan or frying pan with a lid over a medium heat, add 2 tablespoons of the olive oil and fry the onion for 5 minutes, or until softened, and starting to colour. Add the garlic, chilli flakes (if using) and half the basil and continue to cook for 2–3 minutes.

Heat the oil in a large saucepan over a medium heat. Add the mushrooms and leeks, season with a pinch of salt and lots of black pepper and fry for 5 minutes, stirring regularly. Add the orzo and cook for a few seconds more, then stir in 1.2litre/2 pints water and crumble in the stock cube. Bring the liquid to the boil and cook for about 12 minutes, or until the orzo is soft and the sauce is thick and glossy, similar to a risotto.

For the chicken, combine the sesame oil, sugar, soy sauce and egg in a small bowl. Place the chicken in a large bowl and massage the marinade well into the meat. Mix the batter ingredients and 4 tablespoons of cold water together in a bowl and massage all around the meat. The batter should have quite a sticky consistency. For the stir fry, lay out the prepared ingredients in order, excluding the vegetable oil and coriander.

Mix together the yoghurt, garlic, olive oil, juice of 1 lemon, all the spices and ½ teaspoon each sea salt and pepper. Place the chicken thighs between two sheets of greaseproof paper (you’ll have to do this in batches) and hit them with a rolling pin or the base of a frying pan until they are all 1cm/½in thick. Place the chicken in the marinade and mix together well. Cover and place in the fridge overnight.
