STEP 1Preheat the oven to 375 degrees F. Use ½ tablespoon of the olive oil to coat a 9-inch pie pan. STEP 2Place a large sauté pan over medium-high heat and add the remaining olive oil. STEP 3Add the leeks and ½ teaspoon of the salt, and stir to coat the leeks in the oil. Reduce the heat to low and cook, stirring frequently, until the leeks are tender and translucent, about five minutes.

STEP 1In a 10-inch nonstick skillet, heat 2 tablespoons of the olive oil over medium heat. STEP 2Add the sliced potatoes and stir to coat them, then stir in the onion. Reduce the heat to medium-low and cover the pan for 10 to 15 minutes, or until the potatoes are tender. STEP 3Remove the skillet from the heat and transfer the potatoes and onion to a bowl to cool slightly. STEP 4In a large bowl, whisk the eggs and salt, then fold in the potato and onion mixture.

STEP 1Heat oven to 375 degrees F. STEP 2Add the wild rice, water, and 1 teaspoon of the sea salt to a large saucepan. Bring to a boil, then lower the heat to a simmer, cover, and cook until the rice is tender, about 45 minutes. Add more liquid if needed. STEP 3While the rice cooks, add the broccoli, sweet potato, bell pepper, olive oil, pepper, and remaining salt to a large bowl. Stir to coat the veggies, then spread the mixture in a single layer on a sheet pan.

STEP 1In a large, heavy-bottomed pot or Dutch oven, heat 2 tablespoons of the oil over medium heat. STEP 2Pat the chicken thighs dry with a paper towel and season with ½ teaspoon of the salt. STEP 3Add the chicken thighs to the pot and cook until browned, about five minutes per side, then remove and set aside. STEP 4Add the remaining tablespoon of oil to the pot, then add the carrots, peppers, onion, and sweet potato and sauté until softened, about five to seven minutes.
