Drain the tofu and place on a plate between a few sheets of kitchen paper. Place a saucepan or stack of plates on top to squeeze out as much water as possible without crushing the tofu. While the tofu drains, heat 2 tablespoons of the oil in a large frying pan over a medium-high heat and fry the shallots and sweet potato for 5 minutes or so, until the shallots are softened and the sweet potato is starting to colour.

Heat the vegetable oil in a large pan and cook the onion and spring onion for 5 minutes (hold back a little uncooked spring onion for the garnish.). Add the garlic to the pan and stir-fry for about a minute until fragrant. Add the chopped kimchi to the pan, reserving 2 tablespoons of the brine, and stir well. Stir in the gochujang paste, soy sauce, sesame oil, sugar and salt. Mix well. Pour in the vegetable stock and the kimchi juice (reserved brine), then bring everything to a boil.

To marinate the beef, put the beef in a non-reactive, large bowl and add all the other marinade ingredients. Mix well and ensure that the beef is covered in the marinade. Cover and transfer to the fridge overnight for best results, alternatively leave at room temperature for 20 minutes. Heat the vegetable oil in a large saucepan with a lid and add the cinnamon stick, star anise, and lemongrass. Infuse for 1 minute and then remove from the heat.

Heat the olive oil in a pan and add the onion. Season with 1 teaspoon salt and fry for 5 minutes. Add the leek, carrot, green and red peppers and fry for a further 5 minutes. Add the garlic and cook for 1 minute. Stir in the ground cumin, smoked paprika, sweet paprika, salt and black pepper, mix well and cook for 1 minute. Add the harissa paste and tomato purée, cook for 1 minute, then mix in the lemon zest. Tip the canned tomatoes, lentils, drained chickpeas and stock into the pan.

For the stew, heat the olive oil in a large pan and once hot, add the beef cubes. Season the beef with salt on all sides while it is browning. Once the beef is browned all over, remove it from the pan. Add the onion, parsnip, celery and carrot and cook for 8 minutes, or until softened. Add the garlic and cook for another minute. Stir in the tomato purée, stirring well and cook for another two minutes. Add the fresh thyme, rosemary and bay leaves to the pan and mix thoroughly.
